Hello everybody!
I know it has been a long time, but I am finally back with a sweet & delicious recipe for the summer! Have you ever heard of strawberry charlotte? well, this is the ultimate easy and refreshing cake for your next party!
Using the oven when it is warm outside is a big no for me, so I like making charlotte a lot because I do not need to bake this cake. It only takes a few ingredients and it is made very quickly which is perfect if you are lazy like me.
Back in France, my mother used to make this a lot during the summer. It comes in different flavors, the most popular are usually strawberry charlotte or chocolate charlotte, but you can make it with the flavor of your choice, such as mango, pear and chocolate, etc.
I will share with you this amazing recipe and hope you will appreciate it as much as I do!
Ingredients:
- 4 packs of lady fingers.
- 250g Greek yogurt
- 200g sugar
- 2 glasses of water
- 2 tbs of malibu
- 2 gr of gelatin or agar-agar
- 250 gr of strawberries
- 1 box of strawberries for decoration
Preparation:
1- Mix the greek yogurt and 50 gr of sugars. Then, incorporate 250g of strawberries. I used frozen strawberries already diced, but you can use fresh diced strawberries instead.
2- Boil 1/2 of a glass of water and add the 2g of gelatin or agar agar until it is completely diluted. Add it to the mixture of yogurt, sugar and strawberries. Let it rest.
3- Mix 2 glasses of warm water, the rest of the sugar and 2 tablespoons of malibu (coconut rhum). I added malibu because I like the flavor it give to this syrup, but you can remove it if you don’t like it. Once your syrup done, dip the lady fingers into it. I would recommend to use the harder lady fingers instead of the soft ones, because they will not get as mushy once dipped into the syrup. If you use the soft ones, don’t dip them too long into the syrup.
4- Now is the time to make the cake! Take a bowl, such as a salad bowl. You might want to get a bowl of medium size, not to large on the sides. Cover the inside of the bowl with cling wrap, so it will be easier to take the cake out. Then, put some of the dipped lady fingers at the bottom, next to each other. Continue by adding lady fingers vertically on the sides.
5- Place half of the yogurt mixture, and cover with ladyfingers. Add the other half and cover with lady fingers once again.
6- Let it sit in the fridge for a couple of hours or overnight. Then, place a plate at the top of the bowl and flip the bowl and the plate together. The cake should come without any problem.
7- You can decorate your cake with fresh strawberries. Cut them finely, and place them on top of the cake so it gives the shape of a flower. And it is all ready to serve!
As you can see it is really easy to make and will be a fresh treat for the summer!
