Peppers In Tomato Sauce

Hi everybody!

Time for a healthy and colorful recipe! Summer is the best time of the year when it comes to vegetables and it would be too bad to skip on these gorgeous and delicious summer veggies! One of my favorite vegetables during summer is peppers because they come in sunny colors and they are very easy to prepare. This recipe is also vegan and very flavorful!

The reason why I love this recipe so much is mostly because I can incorporate it with any meal. I usually mix them with some pasta or put them on top of rice. Because these peppers are very saucy, the flavor soaks right into the rest of the food and it’s absolutely delicious! It only requires a few ingredients and steps which is very convenient if you don’t like to cook much. The rich flavor of this dish is all thanks to the simmering so all you have to do is sit and relax while waiting for your delicious peppers to be ready!

Ingredients:

  • 1 onion
  • 3 peppers (red or yellow preferably)
  • 2/3 cup tomato sauce
  • 1/2 vegetable broth cube (I used the brand GoBio!)
  • 1 cup water
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1 tbsp olive oil
  • Salt and pepper to taste

Preparation:

1- First, slice the onion and reserve on the side. Wash the peppers and remove the stem and seeds, then cut them into slices. Don’t cut the slices too thin as they may become too mushy during the simmering.

2- In a frying pan, add a tablespoon of olive oil and cook the onion. When the onion starts to soften add the slices of peppers. Cook for 5 min.

3- Add the tomato sauce and the water. Mix well and add the half of the vegetable broth cube and the spices, salt and pepper. Mix well and cover.

4- Let simmer for about 45 min to 1h and stir occasionally. Then enjoy as a side or mix it with pasta or rice!

This recipe is so easy to do and is so flavorful! Even if you’re not a veggies lover I can guarantee that you will love this recipe!
