Hello everybody!

Today’s recipe is one of my favorites and I am sure that you heard of it before! Röstis are mostly known as being a Swiss specialty, but because France is so close, you can expect them to be on our food register as well! These delicious potato pancakes are very similar to hash browns and make a very good meal! Röstis are very easy to make, there are mostly made of shredded potatoes and onions but it comes in different ways and sizes. In France, röstis can be found mostly in Franche-Comté, Alsace and Lorraine, so mostly North-East of France.

In Switzerland, röstis are usually bigger and mixed with bacon and cheese which make them richer and a more complete meal. In Franche-Comté you will find them made the same way as our Swiss neighbors as we are the closest, but in Alsace and Lorraine they come in smaller sizes and without bacon and cheese. My favorites are the Alsatian röstis because they make the perfect side of a meal and they are not as heavy.

Now when it comes to preparation, there are different opinions. Some only make them with raw potatoes, some with cooked potatoes or some with both. Personally I like to use both raw and cooked potatoes as I find the texture better. In any way, it doesn’t matter how you prepare them or how big you make, they will be great anyway. That’s a promise!

Let’s start cooking!

Ingredients (for 8 to 10 röstis):

  • 5 big potatoes
  • 1 onion
  • 1 egg
  • 2 tbsp flour
  • 1 tsp nutmeg
  • Salt and pepper to taste
  • olive oil

Preparation:

1- Peel and wash the potatoes. Out of the 5 potatoes, boil 2 until they are cooked but still firm. If they fall apart, it will be harder to grate.

2- Shred the remaining 3 potatoes. Place the grated potatoes in a cloth or cheese cloth and squeeze out the excess water. Place the drained potatoes in a large bowl.

3- Peel the onion and grate it. Like for the potatoes, squeeze out the excess water and place in the bowl.

4- Grate the cooked potatoes and add to the bowl. Add the egg, flour, nutmeg, salt and pepper. Mix well.

5- In a frying pan, heat up some olive oil. Form patties with the mixture and place in the pan. Cook on medium heat until both sides are golden brown.

Röstis can be eaten with anything like meat, vegetables, saucy meals, etc. As I said earlier, you can also make it the Swiss style by making them bigger and adding some bacon and cheese for a fuller and richer meal. Either ways they are delicious!
