Christmas is approaching so fast and I’m already busy with shopping! This time of the year is always beautiful and colorful so I thought of sharing this easy and colorful salad recipe. Rainbow carrots are my favorite because they bring so much color to any dish so I decided to make a very simple salad with a light ginger dressing, chopped cilantro and roasted peanuts.
This rainbow carrot salad takes no time to prepare and will make a great side dish for any meal. The ginger dressing goes so well with the sweetness of the carrots and the roasted peanuts give a nice crunch to this salad. It’s simple, easy and delicious!
Let’s start cooking!
- A bunch of rainbow carrots
- 1 tbsp olive oil
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1 garlic clove
- 1 tsp soy sauce
- 1 tsp sugar
- 1 tsp sesame oil
- Roasted peanuts
1- Wash and peel the carrots. On top of a bowl, peel the carrots completely. You can also use a spiralizer if you prefer.
2- In a separate bowl, add the olive oil and rice vinegar. Grate the ginger and chop the garlic clove finely and add to the bowl. Add in the soy sauce, sugar and sesame oil and mix well.
3- Mix the carrots with the dressing and top with chopped cilantro and roasted peanuts.
I love how colorful and delicious this salad is. It’s super easy and quick to make so it’s convenient for when I don’t have much time to cook.
