Today is the day for another delicious bredele recipe! This one is very popular as well and very easy to make. This shortbread cookie is not your usual as it contains ground almonds, lemon zest and cinnamon. The cinnamon really adds an amazing flavor to this cookie!
Schwowebredele will always be in any Christmas cookie bag! If you have the chance to go to Alsace around Christmas I really advise you to go buy some bredele as they are so delicious. Alsace’s proximity with Germany gives us similar Christmas traditions that I really love and bredele are one of them. This cookie is probably one of the easiest to make and it will change from the usual shortbread or sugar cookie. They are usually brushed with egg wash but I prefer topping them with some royal icing and sprinkles as it makes them super cute!
Let’s start baking!
- 500 g/ 3 + 1/3 cups flour
- 250 g/ 2 sticks + 1 tbsp soft butter
- 250 g/1 cup sugar
- 250 g/ 2 cups+ 2 tbsp ground almonds
- 2 eggs
- 1 lemon zest
- 1 tsp cinnamon
- 1 tbsp kirsch
- 1 egg white + 150 g (1/2 cup) icing sugar for royal icing
1- In a mixing bowl, mix the soft butter, sugar, ground almonds, eggs, lemon zest and cinnamon until it is homogeneous.
2- Add in the flour and mix well until you get a smooth and non-sticky dough. Cover with surround wrap and let rest in the fridge for 1h.
3- Preheat oven at 180 C/ 355 F. On a floured table, roll the dough until you get a thickness of about 1/2 a centimeter. Then cut the dough with your favorite cookie cutters.
4- Place on a baking sheet and bake for 10 to 15 min (they should have a golden color). Let them cool down and add the royal icing and sprinkles on top. Let dry and enjoy!
