Zimtsterne: Alsatian Cinnamon Stars

Hello everybody!

This is the last bredele recipe of this Christmas cookies series! These cinnamon stars are another traditional Alsatian bredele that I have every year. What makes them so special is that they are chewy and have a strong cinnamon flavor. They are really easy to make and require very little ingredients which is great if you’re new to baking! These are also gluten-free which makes them the perfect Christmas cookies for your family members or friends who have gluten intolerance. These are a pure delight during this holiday season and always a favorite at home!

Let’s start baking!

Ingredients:

  • 250 g/ 1+1/3 cups icing sugar
  • 250 g/ 2+1/3 cups ground almonds
  • 2 tsp cinnamon
  • 2 egg whites
  • 1 egg white + 150 g/ 2 cups icing sugar

Preparation:

1- In a mixing bowl, mix the icing sugar, ground almonds and cinnamon together. Then add the egg whites and mix well until it is homogeneous. Cover with surround wrap and let rest in the fridge for 1h.

2- Place the dough on top of a piece of parchemin paper and place another piece of parchemin paper on top. Roll with a rolling pin until the dough gets a thickness of about 1/2 a centimeter. Dab the star cookie cutter in icing sugar and cut the dough with it. Let the stars dry at room temperature for a couple of hours or overnight.

3- Preheat the oven at 170 C/ 340 F. Place the stars on a piece of parchemin paper on a cookie sheet and bake for 10 min. Let the stars cool down and add the royal icing on top. Let them dry and store in a metal tin.

This recipe is so easy to make and delicious. I love that the stars are chewy and have a strong flavor of cinnamon. This recipe is also gluten-free so it will  make a perfect Christmas treat for those with celiac disease!

    How do you prepare the royal icing before spreading it onto the stars?

      Hello Nina, to make the royal icing you need to mix the egg whites and the icing sugar together until smooth and homogeneous.
