Scallops On Leeks Fondue

Hello everybody!

Today’s recipe is a classic appetizer in Brittany, North-Western France. Brittany is close to the Atlantic ocean which means that many specialties of this region are seafood based and if you’re a seafood lover this is really a place I recommend you to visit. My grandmother on my mother side is from Brittany and so I’ve been spending most of my vacations over there enjoying the wonderful cooking of my grandmother. She would make spider crab, shrimps, little sea snails and one of my favorite dishes which is scallops on top of a leek fondue.

This is actually served as an appetizer more than a main dish. There is nothing not to like about this dish as the scallops are seared and almost caramelized in salted butter and it pairs so well with the leeks that are slowly cooked in butter and cream. The flavors and even the seasoning are extremely simple but this allows you to truly enjoy the natural flavor of the ingredients. The recipe can easily be made at home and I’m very happy that I’m able to reproduce this dish in Canada.

Let’s start cooking!

Ingredients (for 2 persons):

  • 2 leeks
  • 1 tsp butter
  • 1 tbsp heavy cream
  • 1/2 tsp dijon mustard
  • 100g fresh scallops
  • 1 tsp salted butter
  • salt and pepper to taste

Preparation:

1- Cut the root and the leaves, as well as the greenest parts of the leeks. We only need the white parts for this dish. Cut them in half in the length (so horizontally), then slice the leeks thinly. Place the sliced leeks in a bowl and wash them under cold water to remove any dirt. Drain and set aside.

2- In a large pot, melt 1 teaspoon of butter and add the slices of leeks. Let them cook for 20 min. Once they are soft, season with salt and pepper. Add in the mustard and the cream, stir well and cook for a couple more minutes. Remove from the heat.

3- Heat a teaspoon of salted butter in a pan and sear the scallops until they get a nice brown color on each side. Place the leeks fondue on a plate and the scallops on top and enjoy!
