Chocolate Liegeois Mousse

Hello everybody!

It’s time for another delicious treat that will delight every chocolate lover! I shared with you before the recipe of the chocolate mousse and we are going to use it again in this version. Chocolat liégeois is the French version of the chocolat viennois which consist of a hot chocolate topped with whipped cream. In France, chocolat liégeois became a popular dessert and we replaced the hot chocolate with chocolate ice cream or chocolate mousse. It’s a delicious treat that is easy to make and that you will find very easily in any grocery store in France.

This is one of my favorite desserts since it is so quick to make but also because the two layers go so perfectly together. Chocolate mousse can be quite heavy and the light whipped cream creates the perfect contrast of texture. For this recipe I decided to add a little Canadian twist to it by making a maple whipped cream which was truly delicious. It brings an extra flavor to the dessert and some extra sweetness as well. This is always a pleasure to dig in the layers or even just mix everything together like I used to do when I was younger. In any case, this is a dessert you need to try!

Let’s start cooking!

Ingredients: (make 4 regular servings or 2 big servings)

  • 7 oz semi-sweet chocolate
  • 1/2 tbsp of unsalted butter
  • 6 egg whites
  • 1 + 1/2 tbsp of sugar
  • 250 ml heavy cream
  • 1/4 cup maple syrup

Preparation:

1- Add the chocolate and the butter into a pot and melt it in a bain-marie. This will allow the chocolate to melt slowly and evenly. The chocolate has to be smooth.

2- While the chocolate and butter are melting, beat the egg whites until firm. Then add the sugar and keep beating until it has dissolved.

3- Remove the pot from the bain-marie and stir well. Add a couple tablespoons of egg whites into the melted chocolate and mix with a whisk until smooth. The eggs whites have to be fully incorporated into the chocolate.

4- Now pour this mix into the rest of the eggs whites. Whisk everything together very gently. It is important to be gentle to keep a fluffy and aerated texture. Make sure that the egg whites and the chocolate are properly mixed together.

5- Let the mousse rest for at least 1h in the fridge.

6- Add the heavy cream and maple syrup in a mixing bowl and whip until firm. Place the chocolate mousse in containers and top it with the whipped cream and enjoy!

An easy recipe for a delicious and decadent dessert! You can of course make the original version if you want but the maple flavor really makes this dessert extra special!

    OMG! I remember when I lived in France I used to eat something VERY similar to this! I did make this! It is amazing! The maple did add a flavor but next time I think ill leave it out and try to see if I can come closer to what I had in France. I LOVE the fact that you transport me back there! THANK YOU

      This is definitely a very popular dessert there. Back in France, I used to buy it all packaged at the grocery store, but in Canada it’s not popular so I make it myself. It’s more traditional without the maple syrup for sure. Happy to transport you back to France 🙂
