Healthy Banana Bread

Hello everybody!

This week’s recipe is going to be another great and healthy breakfast food. If you remember I shared with you my vegan cookies recipe a couple weeks ago and they are my favorite for a quick and healthy breakfast. The other thing I eat is banana bread but a healthier version with oats, nuts, coconut oil and honey. I noticed that a lot of persons were surprised that I eat cookies and cake for breakfast and the reason is that breakfast is always sweet in France and because this is what I ate since I could eat food, it is impossible for me to eat something savory for breakfast. We all know that sweets are not exactly the best and especially for breakfast when we need something to keep us full until lunch so that’s why I came up with healthier versions of the things I like.

I tried many recipes of banana bread, vegan or not, and this one is my favorite so far since it is not too moist. This recipe has a nice texture, exactly like a cake, and there is the perfect amount of sweetness. I replaced sugar with honey in this recipe and even though sugar is sugar, I think that honey has much more nutrients to offer. This recipe is very easy and quick to make and that’s another great breakfast food for those who don’t have time in the morning.

Let’s start baking!

Ingredients:

  • 2 cups/ 212 g oat flour
  • 1 egg
  • 1/2 cup/ 175 g honey
  • 3 tbsp coconut oil
  • 2 ripe bananas
  • 1/4 cup/ 60 g soy milk
  • 1/2 tsp cinnamon
  • 1/3 cup/ 70 g walnuts
  • 1/3 cup/ 70 g chocolate chips
  • 1 tsp vanilla extract
  • 1 tsp baking soda

Preparation:

1- Preheat the oven at 325 F/ 160 C. In a large bowl, add the oat flour, baking soda and cinnamon. Mix well.

2- In a food processor, add the bananas cut in slices, the egg, honey, coconut oil, soy milk and vanilla extract. Mix until everything is smooth and homogeneous. Pour in the bowl and mix well.

3- Add in the walnuts and chocolate chips and mix well. Grease a cake pan with coconut oil and pour the mixture in. Bake for about 50 min. If the blade of the knife is clean it’s that your banana bread is ready. Let it cool down and enjoy!

A super easy and delicious recipe that will give you energy in the morning. This is a favorite in my house and I hope it will be yours too!
