Mâche Salad With Blue Cheese, Pecans & Radicchio

Hello everybody!

A beautiful weather means that the salads are coming back! After the cold storm week we had previously in Toronto, I’m adjusting to the heat and here is my first fresh salad recipe of the season. This mâche salad is very fresh and flavorful and this is a very easy recipe to prepare.

Mâche is a very popular kind of salad in France because of its buttery texture and sweet and nutty flavor which makes it a very delicate salad. When it comes to salads, I always like to mix greens for different textures and flavors and that’s exactly what I did for this recipe.

In addition to mâche, I added some radicchio for its bitterness but also because this is a very crisp green. The best ingredient to add into a salad is obviously cheese and I decided to add blue cheese for it’s sharp and strong flavor as well as some pecans for the crunch and the nutty flavor.

mâche salad recipeAll the textures and flavors in this salad go so well with each other and really compliment the flavor of each ingredient. I chose a very simple dressing, definitely French inspired as well, which is composed of olive oil, balsamic vinegar and old style Dijon mustard.

If you never had old style Dijon mustard then you must try now! It’s not as strong as regular mustard, but it does add a nice kick, and the texture is also very interesting as you can feel the mustard seeds. This is one of my favorite kind of mustard and it can be used for many recipes. This salad recipe has been a favorite of mine this past week and I’m very happy to share it with you!

Let’s start cooking!

Ingredients:

  • 1 box of mâche salad
  • 5 leaves of radicchio
  • Blue cheese (as much as you want)
  • Pecans (as much as you want)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp old style Dijon mustard (moutarde à l’ancienne)
  • Salt and pepper to taste

Preparation:

1- Wash the mâche and radicchio thoroughly and drain all the water.

2- Add both the mâche and radicchio in a bowl or plate and mix well so the radicchio is well distributed in the mix.

3- Add some crumbled blue cheese and pecans on top.

4- For the dressing, mix the olive oil and mustard and mix well. Then add the balsamic, salt and pepper to taste. Mix well and pour on your salad.

This is a very simple and quick salad recipe to make and it’s perfect as a side dish, an appetizer or even as a main. It’s best paired with some toasted bread and of course a glass of red wine!
