Savoury Flan With Zucchini, Feta & Sun Dried Tomatoes

Today I’m sharing with you a French recipe which is often made for dinner since it’s a bit lighter but it also makes a fantastic appetizer if you have friends or family over. This recipe is very easy to prepare and doesn’t require much steps so it’s perfect if you don’t have much time on your hands or if you don’t like cooking too much.

Flan is originally a French dessert recipe composed of eggs, milk and flour that is baked to give it texture and it is what you call here custard. It can be made with a crust or without but any case it’s a delicious dessert. This recipe is the savory version of it so no sugar here, but some delicious cheese and vegetables.

This recipe has a summery feel to it and is actually a great dish for the season! The best thing with flan is that you can add anything to it. I chose feta, zucchini and sun dried tomatoes, but you can add any ingredients or leftovers you have at home and it will still be delicious.

Texture wise, flan has the consistency of an omelette but creamier and smoother. In France, this is something we eat for dinner normally, since we usually eat less and lighter, but you can eat it for lunch or brunch or even as an appetizer. I love eating this flan with some grilled potatoes and a salad, but of course you can add the side dishes of your choice!

Let’s start cooking!

Ingredients:

  • 16 g sun dried tomatoes
  • 2 zucchinis
  • 150 ml milk
  • 120 g crème fraîche (or sour cream if you can’t find)
  • 4 eggs
  • 160 g feta
  • 2 tbsp corn starch
  • 1 tbsp olive oil
  • 1/2 oregano
  • Salt and pepper to taste

Preparation:

1- Preheat the oven at 410 F. Re-hydrate the sun dried tomatoes in water then drain and reserve on the side. Wash the zucchini, cut them in half and slice them. Heat up a pan with a little bit of oil and cook the zucchinis until they get a little softer. Reserve on the side.

2- In a bowl, mix the corn starch and milk together until homogeneous then add the eggs and the cream and whisk until you get a smooth and homogeneous consistency. Add the feta, zucchinis, sun dried tomatoes, oregano and salt and pepper and mix well.

3- Spread the tablespoon of oil all over a cake pan and pour the flan mixture. Place in the oven and bake for 30 min. Serve and enjoy!

This flan is so easy to prepare and make a wonderful lunch or dinner accompanied with a salad or other vegetables. This is a light but flavorful recipe!
