I usually don’t have much time in the morning so I like to create quick but nutritious recipes for breakfast. My favorite thing to bring with me at work is cake or cookies as they are easy to make and very convenient to pack.
This time I created apple pie oat cookies which are refined-sugar free and vegan an also perfect for those who need a healthy breakfast every morning. These cookies don’t need much ingredients and are very quick and simple to make which is great for anyone who has no time during the week!
Since it’s fall and the apple season, I couldn’t resist using them for these cookies and I really love the flavor they bring. I added some maple syrup to sweeten the cookies but also to give them this little extra flavor. These cookies are quite soft, not too sweet but just enough to be very satisfying.
I love using oats to make cakes or cookies especially if it’s for breakfast as I find them much more filling than when I use white or whole wheat flour. I kept this recipe very simple, but I think that adding some ground or chopped nuts to these cookies would make them even better.
Let’s start baking!
Ingredients:
- 1 cup quick oats
- 1 cup oat flour
- 1/3 cup unsweetened applesauce
- 1 tsp baking soda
- 1/3 cup maple syrup
- 1 apple
- 1 tsp cinnamon
- 2 tbsp avocado oil
Preparation:
1- Preheat the oven at 355 F. In a mixing bowl, add the oats, oat flour, cinnamon and baking soda and mix well.
2- Peel and dice the apple in small pieces. Add in the applesauce, maple syrup and oil to the mixing bowl. Mix well and incorporate the pieces of apple.
3- Form balls with the dough and flatten them on a baking sheet lined with parchemin paper. Bake for 15-20 min and enjoy!
These cookies are very nutritious and make a healthy breakfast especially when you’re in a hurry. They will keep you full until lunch time!
