Hello everybody!
When I moved to Toronto, I was amazed at all the international food available and for the foodie that I am, it was a paradise! One popular dish that I discovered here was perogies, those Polish dumplings filled with potatoes and cheese, and I truly fell in love with them. I honestly didn’t know much about Polish food before and so trying perogies gave me the envy to learn more about the culture and food of the country.
Since they are popular, I was able to try different brands, but I must admit that I felt like I should try a better version. So I first had homemade ones in a restaurant and then decided that I should start making them myself. Like for all food, I find that perogies are so much better homemade but they can take a bit of time to prepare unfortunately.
What took me the most time was to make the dough so I decided to buy dumpling wrappers to go faster and I think they are just as good! For the filling, I went with the traditional potato and cheddar but I chose an old cheddar as I prefer cheese with a stronger flavor.
I also thought that some caramelized onion would make those perogies even more delicious and it really did. This is a very classic recipe but you can’t go wrong with it!
Let’s start cooking!
Ingredients:
- 1 kg potatoes
- 200 g old cheddar
- 1 onion
- 1 tbsp olive oil
- dumpling wrappers
Preparation:
1- Peel the potatoes and rinse them to remove the extra starch. Place them in a boiling pot and cover with water. Cover and boil until soft.
2- While the water is boiling, peel and dice the onion. Heat up oil in a pan and cook the onion until it is caramelized. Reserve on the side.
3- Cut the cheddar into cubes. Strain the potatoes and place them back in the pot. Add the cubes of cheddar and cover with the lid. Leave for 5 min.
4- Remove the lid and add in the caramelized onion. Mash until there are no more chunks.
5- Place a teaspoon of potato filling into each wrapper. Add some water on the edges, fold and press the edges so the perogie is well sealed.
6- Boil the perogies and serve with sour cream and green onions.
This classic perogies recipe is maybe simple but so delicious! Using wrappers instead of making the dough yourself may not be as authentic but it makes you save quite a bit of time and your perogies will be just as good.
