Speculoos

Hello everybody!

Today I am sharing a cookie’s recipe that is very popular in the North of France and also in Belgium: the speculoos! These delicious spiced cookies are amazing by themselves or in different kinds of desserts. I think everyone is familiar with cookie butter, well it is made with speculoos! This is great to add in crêpes or you can use speculoos for a cheesecake crust or for an apple crumble. There are so many uses for these cookies so they really are amazing. They are traditionally made around St Nicholas (December 6) but I made them a bit earlier this year…just because they are too good to resist until December. They are quite easy to make and if you like gingerbread, cinnamon and spices in general you will love them!

So for this recipe I am using gingerbread spice which is used very often in France so we can buy the mix already made. I am lucky to have my wonderful mom sending me some whenever I need to, because it seems a bit hard to find in Canada. If you can’t find it in stores or even online you can make your own mix yourself, I am sure that you can find a recipe easily online or you can use pumpkin spice that seems to be quite similar. Gingerbread spice is a mix of cinnamon, star anise, clove, coriander, green anise, ginger and nutmeg. It is a really flavorful mix and you can use it for many recipes sweet or savory. It really is a must have in your pantry!

Let’s start baking!

Ingredients:

  • 350 g ( 2 + 1/3 cups) flour
  • 250 g (1 cup + 1 tbsp) cane sugar
  • 250 g ( 1 cup) butter
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp gingerbread spice
  • 1 tsp baking powder
  • pinch of salt

Preparation:

1- In a mixing bowl, add the sugar and spices and mix well. Then add the butter and the egg and mix until it is smooth and homogeneous.

2- Add in the flour little by little and continue mixing. Then add the salt and the baking powder and mix until smooth. Form a ball, cover with surround wrap and let in the fridge for 2h.

3- Take the dough out of the fridge and preheat the oven at 360 F/ 180 C. Cut in half and roll each half until it is thin ( a couple millimeters). You can cut the cookies in a rectangular shape or use any cookie cutter of your choice.

3- Place the cookies on a baking sheet and bake for 20 min. Let them cool down and enjoy!

As you can see there aren’t many steps in this recipe and it is really easy! They will make the perfect Christmas cookies but they are also great all year round with your coffee or tea. And the best part will be this wonderful perfume of spices all over your house!

    Thank-you for that, I will be making them. As I remember from Belgium I think some of them were made in moulds, like the old fashioned gingerbreads but I like ones you have made in ’rounds’ they look delicious. All the very best from Normandie, Sue

      You are right they normally use a mold to make them and I definitely want to get my hand on one so my speculoos can look a bit better. Cookie cutters are the easy alternative for now 🙂 Let me know if you try my recipe, would love to hear your feedback!
