Hello everybody!
If there is one thing I absolutely love about Canada it’s maple syrup. Even back in France I would buy some and of course after coming to Canada it’s always in my house. I didn’t know until a couple years ago that there were other products made from maple syrup such as maple butter and maple sugar. So what a surprise for me to find these ingredients! I love baking “sugar free” treats and always been using maple syrup as a replacement until now. I decided to give a try to maple butter and sugar in my previous Nutella recipe and I simply love it. It is not overly sweet and almost has sort of saltiness to it.
So here I am today sharing with you a maple walnut shortbread cookies recipe! If you’re not much of a sweet tooth these cookies are great because they’re not very sweet but they are very flaky and delicious with tea or coffee. I decided to make this recipe vegan but you can easily replace the vegan butter with regular butter if you prefer. In these cookies, you can clearly taste the maple and it goes so well with the chunks of walnuts in there. A pure delight!
Let’s start baking!
Ingredients:
- 2 cups white flour
- 2/3 cups maple sugar
- 1/2 cup chopped walnuts
- 1 cup vegan butter
- 1 tsp vanilla extract
- A pinch of salt
Preparation:
1- In a mixing bowl, add the flour, maple sugar, salt and vanilla extract. Mix well.
2- Add the vegan butter (it’s better if it’s soft) and start kneading with it. The butter has to be well mixed with the dry ingredients so make sure to knead well. Form into a bowl. It should be non sticky and not falling apart.
3- Flour a plane surface and roll the dough into a roll. I advise to go slowly as the dough can break easily. Wrap with surround wrap and place in the fridge for 1h.
4- Preheat your oven to 355 F. Remove the dough from the fridge and cut slices of about 2 cm each. Place them on a greased cookie pan or on some parchemin paper and cook for about 10 min. Let the cookies cool down and enjoy!
I find them really great with my tea and I love how they’re not overly sweet! But warning they are quite addictive!
