Vegan Breakfast Cookies

Hello everybody!

I’m so happy to share with you this vegan breakfast cookies recipe! I’ve been eating them every morning and they are so convenient to bring to work for breakfast or for a healthy snack. They are super easy and fast to make which is great because I can prepare them for the next day very quickly.

I have been experimenting a lot with breakfast cookies and tried different combinations but this one is my favorite. The cookies are perfectly crumbly and rich in chocolate but not overly sweet. I wanted something nutritious, easy to bring anywhere and that would keep me full for a long time. I like to make them plain because I don’t want to eat something very sweet in the morning but you can add some chocolate chips if you prefer. You won’t need a lot of ingredients to make these and everything is very healthy, full of omega 3, healthy fats and fibers. They are delicious!

Let’s start baking!

Ingredients (12 to 15 cookies):

  • 2 cups rolled oats
  • 1 tbsp flax seeds
  • 3 tbsp water
  • 4 tbsp coconut oil
  • 1/3 cup maple syrup
  • 3 tbsp cacao powder
  • 1/3 cup ground walnuts
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Preparation:

1-Place the oats in a food processor and blend until it becomes like flour. I prefer blending the oats instead of buying oat flour because I love that there are still little chunks of oats. It makes the cookies crunchier!

2- Place the blended oats in a large mixing bowl and add the cacao powder, ground walnuts and cinnamon. Mix well until homogeneous.

3- In a small bowl, add 1 tablespoon of ground flax seeds and add 3 tablespoons of water. Mix well and let it rest for 5 min. The mixture should become more sticky. Add it to the mixing bowl.

4- Melt the coconut oil and add it to the mixing bowl. Add the maple syrup and vanilla extract and mix well. At this point you can add some chocolate chips if you want to.

5- Preheat the oven at 350 F. Make little balls with the dough and flatten them on your palm. I like to make small cookies but you can make them bigger if you prefer. Place them on parchemin paper on a baking sheet and bake for 15 min. Let them cool down and enjoy!

They are just so easy to make and one of my favorite thing to eat for breakfast. I usually pair them with a smoothie or a bowl of fresh fruits.
