Salmon & Spinach Gnocchi

Hello everybody!

I already shared with you my love for that gorgeous spinach green color and it was time for me to create another recipe with it. I actually created this dish one weekend without really measuring anything and simply using whatever ingredients I had in my kitchen.

I really liked the result and decided that I should share it with you guys! As you know, I love making cured salmon and what better combo than spinach and salmon? I decided to go for a basic wine cream sauce but with a twist. The addition of the spinach turned this creamy sauce into a vibrant green sauce.

This is a classic combination but I really love the flavors and color of this dish. The sauce has a great hint of dill and lemon which pairs so well with the cured salmon. I chose to mix it with gnocchi instead of pasta but I’m sure it would be fantastic with pasta as well. This is a very simple recipe to make and perfect for lunch or dinner!

Let’s start cooking!

Ingredients:

  • 1 bunch of spinach
  • 1 onion
  • 2 tbsp chopped dill
  • 1/2 lemon zest
  • 100 ml white wine
  • 200 ml heavy cream
  • 180 g cured or smoked salmon
  • 1 box of gnocchi
  • 2 tbsp olive oil
  • Salt & pepper

Preparation:

1- Rinse the spinach thoroughly to remove any dirt. Bring water to a boil in a large pot. Once the water is boiling, add in the spinach and cook for 1 min. Strain and rinse under cold water. Squeeze the water from the spinach and leave it aside.

2- In a pan, heat up a tablespoon of olive oil. Slice the onion thinly and cook it until soft. Add in the spinach and season with salt and pepper. Add the white wine and cook until it boils.

3- Turn off the heat and pour everything in a mixer. Add in the cream, dill and the lemon zest. Mix until smooth.

4- Add water in a large pot and bring it to a boil. Once it’s boiling, add in the gnocchi and cook as indicated on the package.

5- In the mean time, heat up a tablespoon of olive oil in a deep frying pan. Dice the cured or smoked salmon and cook them for a couple of minutes. Add in the sauce and cook until it starts thickening.

6- Once the gnocchi are floating, strain them and add them to the sauce. Mix well and serve topped with some lemon zest and chopped dill.

This gnocchi recipe has the classic salmon and spinach combo but the flavors are great together and this is an easy recipe to make. It’s perfect for lunch or dinner.
