As you must probably know by now, I really like vegetables and summer is the perfect time to experiment new recipes because of all the colorful vegetables that grow in that season. Today I want to share with you my recipe of vegan pot stickers filled with hearty vegetables but still very flavorful and perfect for Chinese food lovers. Pot stickers are some of my favorite dumplings because they are so crispy. They are normally filled with meat but I wanted to make a healthier version using only plant-based ingredients.
I know when you hear vegan and plant-based or even healthy you probably think that it won’t taste as good or won’t be very appetizing or flavorful but let me prove you wrong! These pot stickers are filled with cabbage, carrot, a hearty potato, chewy glass noodles and I added different spices and sauces to give the most flavor possible to these veggies. Also, I pan fried them on each side to make sure that they would be very crispy. And believe me they are very filling! I love having them for dinner with a side of sticky rice or other vegetables.

Ingredients:
Pot Stickers ( makes about 40):
- dumpling wrappers
- 1 onion
- 5 napa cabbage leaves
- 2 oz (55g) glass noodles
- 1 green onions
- 1 potato (mine was weighting 335g)
- 1 carrot
- 2 garlic cloves
- 1 tsp grated ginger
- 2 tsp salt
- 1 tsp black pepper
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 1/4 cup water
Dipping sauce:
- 2 tbsp soy sauce
- 1 tsp rice vinegar
- 1 garlic clove
Preparation:
1- Chop the onion, cabbage and green onion thinly and add them to a large mixing bowl.
2- Grate the carrot and add it to the bowl. Crush the garlic cloves, chop thinly and add to the bowl.
3- Peel the potato and cook it in boiling water until it is soft. Drain and put the potato in a separate bowl. Mix with a hand mixer until it is smooth and sticky. Add the mashed potato to the large mixing bowl and mix well. The potato will help to hold everything together like meat would do.
4- Put the glass noodles to cook in boiling water. Cook for about 4 to 5 min. The noodles should be cooked but still chewy. Drain and cut the noodles thinly and add them to the mixing bowl.
5- Add the grated ginger, salt and pepper, sugar, sesame oil and soy sauce. Mix well.
6- Start filling the dumpling wrappers. Add about a teaspoon in the center of the dumpling wrapper, put water on the edges of the wrapper and close it by pressing down the edges. You can fold the edges like on gyoza to make them look prettier.
7- Pour oil in a frying pan on medium-high heat. Once the pan is hot, add the pot stickers and cook them on each side until they get slightly fried and brown. Turn down the heat to medium heat and pour 1/4 cup of water. Cover and cook until the water has evaporated. Place them on the plate.
8- For the dipping sauce, mix soy sauce, rice vinegar and a chopped garlic clove. Place the dipping sauce in a little bowl and enjoy with your pot stickers!
They may be vegan but they are very flavorful, perfectly crispy and the dipping sauce add even more flavor. They are light but filling which make them the perfect addition to a delicious dinner!
