Blood Orange Candies

Hello everybody!

It’s blood orange season and of course I couldn’t miss on creating a new recipe with this delicious fruit. I made for you a very popular French candy called “pâte de fruit”, translated fruit paste. This fruit paste is a bit gelatinous, sticky and sweet.

Pâte de fruit are very popular during Christmas and this is when we usually eat them but I love to eat them all year round. What is wonderful about these little treats is that they can be made with any fruits and you only need 3 ingredients to make them!

They are usually made with gelatin but I decided to replace it with agar-agar to make it vegetarian friendly. If you never had pâte de fruit before you will surely find the texture interesting as the candy is gelatinous and a bit sticky and you get a great contrast with the crunchy sugar around. It’s very sweet but it’s a delicious candy to enjoy occasionally.

Let’s start cooking!

Ingredients:

  • 150 ml blood orange juice
  • 200 g sugar
  • 2 tsp agar-agar

Preparation:

1- Press the blood oranges and strain the juice to remove the pulp. Add the juice to a pot with 100 g of sugar and the agar-agar. Cook on medium heat until the mixture boils.

2- When the mixture is boiling, add in 50 g of sugar and cook for about 5 min. After 5 min, add in the rest of the sugar and continue cooking for about 2 min.

3- Stop the heat and pour in candy silicone molds (make sure to pick ones that are a little deeper, such as chocolate molds). Let them set in the fridge for 1h to 2h. Then remove from the molds, roll them in sugar and enjoy!

These little candies are so easy to make and some of my favorites. They can be made with all fruits but I really liked using blood orange as the color is gorgeous and the fruit is in season right now. This is a traditional French sweet that must try if no done yet!

    Diane – how much gelatin to use? I am definitely not vegan! Also, how long will these candies keep?

      Hello Lisa, I must say that I haven’t tried making these with gelatin yet. After doing some research, it seems that a 1 tablespoon of gelatin sets 475ml of liquid. So for 150 ml you would need between 1 to 2 teaspoons (I would personally go for 2 tsp). If you are using gelatin sheets, I believe that it is 6 sheets per 475 ml, so you would need 1 to 2 sheets. Hope this helps! Please let me know how they turn out! They last for about a month, stored in a metal tin.
