Pesto & Vegetables Pizza

Hello everybody!

I know it’s really hot everywhere right now, but whatever the weather is, who can say they don’t crave for pizza at some point? I always loved making my own pizza at home which I find quite easy to make and just as delicious as the ones that I order. My only problem with pizza has always been that it’s not very healthy and that it’s more of a treat for me, and something that I regret eating later on.

I have been fascinated by vegan food for a while now and I always wanted to try a vegan pizza, but as the cheese lover that I am, I wasn’t sure that I would like it. A couple months ago, I went to my friends’ house and they ordered a vegan pizza as well as a vegetarian pizza. I must say that I was really surprised because I actually preferred the vegan pizza.

After this surprising experience, I couldn’t wait to make my own at home and I opted for a similar version to the one I tried. I love making my own pizza dough but any store bought pizza dough will do as well. This pizza is very simple since I’m using pesto sauce for the base and marinated vegetables as toppings.

The marinade really gives so much flavor to the vegetables! I usually eat it the way it is, or sometimes I add some thin slices of avocado on top, which add a nice creaminess to the pizza. It’s also amazing with fresh arugula on top. If you haven’t tried vegan pizza yet and are scared that you will miss the cheese just like I was, don’t worry! You wont miss it!

Let’s start baking!

Ingredients:

  • 1 pizza dough (store bought or homemade)
  • 3 tbsp pesto (I used basil pesto from sunflower kitchen)
  • 3 cremini mushrooms
  • 1 small zucchini
  • 6 cherry tomatoes
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1/2 tbsp balsamic vinegar
  • 1 garlic clove
  • Salt & Pepper

Preparation:

1- Slice the mushrooms, zucchini and cherry tomatoes and place them in a bowl. Mix the soy sauce, olive oil and balsamic vinegar in a bowl. Dice the garlic clove thinly, add it to the bowl and season with salt and pepper.

2- Add the sliced vegetables in the marinade and mix well. Cover with surround wrap and let it rest for 1h.

3- Preheat the oven at 380 F. Roll the pizza dough in a circle, spread the pesto and add the vegetables on top. Bake for about 20 min. Let it cool down and enjoy!

This is a very simple but delicious pizza recipe that I love making whenever I have cravings. Even though there is no cheese on it, the pizza is very satisfying and makes a perfect meal accompanied with a salad.
