Goat Cheese & Herbs Triangles

Hello everybody!

I have really been into appetizers lately, but after the spreads come filo pastry! These appetizers are very easy to make, full of flavor and are a great summer recipe. The filo pastry is filled with a mix of goat cheese, herbs like mint, parsley, basil and cilantro, and a little bit of lime.

What I love about them is how crispy they are outside but creamy inside. The herbs make this appetizer very fresh and the lime brings just the right amount of sourness to this recipe. Even though it is baked, I find that this is a very fresh summer recipe.

I actually got inspired from a Moroccan recipe that I used to make back in France with brick pastry. Brick pastry is similar to filo but much thinner and lighter as they are basically very thin crepes. Unfortunately I was unable to find them in Toronto, so I tried to make them myself….which was a disaster.

So I gave up and decided to use filo pastry instead, which worked very well in the end, and is at least very easy to find compared to brick pastry. I love making filo pastry appetizers as they are usually very simple to make, don’t take much time and are so delicious! There are many recipes possible with it but my favorite remains this mix of goat cheese and herbs. Fresh, flavorful and so delicious!

Let’s start baking!

Ingredients:

  • Filo pastry
  • 1 cup mint
  • 1/2 cup Thai basil
  • 1 cup parsley
  • 1/2 cup cilantro
  • 150 g goat cheese
  • 1 lime
  • Salt & pepper
  • Olive oil

Preparation:

1- Measure your herbs and chop them all thinly. In a mixing bowl, add the goat cheese and the chopped herbs and mix well.

2- Add the zest of the lime and the juice of half the lime in the bowl. Add salt and pepper to taste and mix well.

3- Preheat the oven at 355 F. Cut ribbons in the filo pastry and add some of the goat cheese and herb filling. Fold one of the corners over the filling.

Then continue folding so you keep a triangle shape like on the pictures below. Seal the triangle by brushing a little bit of olive oil on the remaining end of filo pastry.

4- Bake for about 15 to 20 min. The triangles should be beautifully colored and crispy. Let them cool down and enjoy!

These little filo pastry triangles are so easy to prepare and make a great appetizer! The goat cheese mixed with the herbs and the lime make these little bites so flavorful and very fresh as well.
